Paper Trading: Remove exchange and change funds
We are enhancing the Paper Trading feature by introducing:
The ability for users to remove added exchanges, with safeguards in place.
The ability for users to customize default funds for each connected exchange.
These additions aim to improve user control and simulate more realistic trading scenarios while preserving data integrity.
